Yule log pyragas vyniotinis / Yule log

Netikėtai. Nepastebėtai, nors laukei, žiūrėjai pro langą su lėkštele sausainių rankose, laikei atvertas duris. Atėjo. Aplankė ir išėjo. Vis tik, beveik magija, tiesa? Spėjom pagalvoti, apgalvoti, pasižadėti, laukti stebuklingos šv.Kūčių nakties ir viltis, tikėti, būti, mylėti.
Eglutės kvapas dar vis neleidžia paleisti to gerumo iš delnų, ir vis dar įsikabinęs laikais ''Ne, ne dar šventės. Dar Naujieji bus! Dar ta naktis, kai susiduria metai, kai vėl kažkas magiško vyksta ir kai mėgini tą gyvenimo pokštą sugauti! Bus ir būsim!'' Dar švęskim savo šventę, švęskim, kad esam sveiki, draugų ir mylimų, šeimos apsupty, kad galim apkabinti mamą, tėtį, brolį, sesę...



Yule log terminas naudojamas pavadinti pailgus pyragus vyniotinius. Populiarūs jie būna 'Šakų' pavadinimu, ar tiesiog vyniotiniu. Variantų begalės kaip ir bet kokiam pyragui. Kepiau pyragą dėl man priimtinų ingredientų, t.y. be miltų, be cukraus. Pasilepinimas buvo labai geras, smagus, o ir gaminti buvo linksma bei nesudėtinga, kaip gali pasirodyti. Išsikepkite Naujųjų metų vakarėliui, nenusivilsite.



Yule log (8-16 porcijų)

5 kiaušiniai, atskirti

1/2 puodelio (120 ml) skysto medaus
2 arb.š. vandens

100 gr migdolų miltų (malti migdolai be odelių iki miltukų pavidalo) (4 v.š. su kaupuku)
25 gr tamsios kakavos miltelių (1 v.š.)


Įdarui ir aptepimui
500 gr grietinėlės plakimui
50 gr tirpinto sviesto
puodelis braškių/aviečių (naudojau šaldytas)
1/2 puodelio (120 ml) skysto medaus
1-2 v.š. tamsios kakavos miltelių





1. Kiaušinių trynius su medumi ir vandeniu išplakite iki balkšvo purumo, t.y. kol ištraukus mikserį liks plakimo žymės.
2. Į išplaktus trynius šaukštu ar mikseriu atsargiai įmaišykite migdolų miltus ir kakavos miltelius.
3. Nuplaukite mikserį, nusausinkite ir išplakite kiaušinių baltymus iki standžių putų, t.y. apvertus indą su išplaktais tryniai, jie neturėtų išvarvėti.
4. Kiaušinių baltymus atsargiai įmaišykite į kakavinę trynių tešlą.
5. Kepimo popieriumi išklokite kepimo skardą (30x35cm), įjunkite orkaitę ir nustatykite 170 laipsnių temperatūrą.
6. Tešlą sukrėskite ant kepimo popieriumi išklotos kepimo skardos. Paskirstykite tešlą tolygiai per visą skardos plotą. Dėkite į orkaitę ir kepkite apie 12-15 minučių, arba kol galėsite paliesti delnu pyrago paviršių ir nelips bei nedrebės paviršius. Jei atrodo, kad vis tik dreba ir po 20 min kepimo, nedvejokite traukite lauk.
7. Patieskite ant stalviršio švarų rankšluostėlį ir atsargiai ant jo apversdami uždėkite iškeptą pyragą. Nuimkite kepimo popierių, bet jį palikite ant pyrago ir palikite atvėsti.
8. Kai pyragas atvės, atsargiai jį suvyniokite kartu su popieriumi į ruloną, vyniodami ilgąją pyrago kraštinę. Palikite tol, kol paruošite pyrago įdarą bei aptepimą.
9. Įdaras. 250 gramų grietinėlės plakite iki kol suplaksite tirštą grietinėlę. Tada įpilkite 1/4 puodelio medaus ir paplakite vėl.
10. Aptepimas. Likusią grietinėlę bei tirpintą sviestą bei likusį 1/4 puodelio medų plakite mikseriu, kol pasidarys standi masė. Įberkite kakavos miltelius ir atsargiai įplakite juos, kol visa aptepimo masė nusidažys kakavine spalva.
11. Išvyniokite pyragą, nuimkite popierių ir aptepkite pyragą įdarui skirta grietinėlės mase. Apdėliokite braškėmis ar kitomis uogomis. Vėl pyragą atsargiai suvyniokite į ruloną. Gali šiek tiek įtrūkti, bet nieko baisaus - užglaistysit aptepimu.
12. Suvyniotą pyragą aptepkite aptepimui skirta kakavine mase. Dekoruokite išraižydami šakute ar peiliu norimas formas, ar apibarstykite kažkuom. Dėkite apipavidalintą pyragą į šaldytuvą ir palikite porai valandų pastingti.



P.S. aptepimui sviestas nėra būtinas, jis tik padeda grietinėlei nenubėgti nuo pyrago ir ilgiau aptepimas gražiau tvirčiau atrodo. Grietinėlė apdžiūtų, sukristų.. Be to, aptepimą galite daryti su tirpintu šokoladu bei sviestu (be grietinėlės ir medaus tada).
Valgėme dvi dienos po pyrago kepimo - buvo pats tas: drėgnas, skoniai nesusipynę, ne per saldus. Medaus kiekį pasireguliuokite ragaudami aptepimą bei įdarą. Jei trūks saldumo patiekdami apšlakstykite skystu medumi... Šalia padėkite šaldytų ar šviežių (?!) uogų...

Yule log (8-16 servings)

5 eggs, separated
1/2 cup (120 ml) liquid honey
2 tsp. lukewarm water
100 g almond meal/ground almonds without skins (I used full 4 tablespoons)
25 gr of dark cocoa powder (1 tablespoon)


for filling and icing
500 g double cream 
50 g melted butter
a cup of frozen or fresh strawberry/raspberry (thawned)
1/2 cup (120 ml) liquid honey
1-2 tablespoons dark cocoa powder

1. Add honey  and 2 tbsp water to the egg yolks. Using an electric whisk, whisk honey and yolks until the mixture is light in colour and thick enough to leave a trail when the whisk blades are lifted. 
2. Sift in almond meal/ground almonds and cocoa, then fold in lightly, using the whisk blades or a spoon.
3. Using a clean whisk, beat the egg whites until they are stiff.
4. Then fold into the cake mixture in three batches, again using the blades to preserve as much air as possible.



5. Line a baking tray (30x35 cm) with a parchment paper, turn on the oven and set the temperature at 170 degrees Celcium.
6. Pour the mixture evenly over the prepared tin, then carefully spread to the edges. Bake for 10-12 mins, or until the cake feels firm to the touch. 
7. Put a clean towel on the table. Turn the cake out onto the towel and peel off the parchment paper. Cover with a clean tea towel, then leave to cool completely.
8. Trim a little cake from all the edges, then score along the edge of one of the long sides of the cake and roll up from there, using the paper to help you, rolling the paper inside the cake.
9. Filling. Whisk 250 grams of double cream until thick. Then add 1/4 cup of honey and whisk again.
10. Icing. Use the rest of double cream, melted butter and remaining 1/4 cup honey. Whisk everything until thick. Add the cocoa powder and gently whisk it into the mixture.
11.  Carefully unroll the cake, then spread all the filling over to within 2cm of the edges. Sprinkle berries in top. Roll up the cake again using the paper to help you, then set on a board.
12. Spread an icing over the cake. Place the cake in the refrigerator and leave for a couple of hours to settle.





P.S. butter is not necessary for icing. You can use just whisked cream - icing will be softer and not so nice. An icing can be made with melted chocolate and butter instead of whisked double cream.
Delicious, not too  sweet cake, moist, can be served with drzzled honey if you have a big sweet tooth.
